Besides, I don't get how the Override reflexion in environment @ vrayrender works!
If I put a HDRI there, are my glasses going to reflect that and not the real entourage or what?

To the best of my knowledge overriding the enviorment in the Vray renderer simply tells Vray to disregard any backround enviorment colour (or maps) in the project when it calculates the reflections and shading of the scene and replace them with whatever hdr map you drop in. So the hdr map will be visable only on reflective surfaces of your final image while your orignal enviorment color or map will still be visable but wont have effected the objects in your scene. clear as mud!
